GASC 4000 Advanced Cooking

Application of advanced haute cuisine techniques. It includes the development of a general perspective of the cuisines of the world, the practical knowledge of nutrition and culinary sustainability. Emphasis on the professional table service required in the tourism industry, in the operational management of a restaurant and in the anthropological research of local gastronomy. It requires 30 teaching hours and 90 hours of closed laboratory.
